on explore The Almond AKA Cork Nut Prunus dulcis syn Prunus amygdalus Batsch Amygdalus communis L Amygdalus dulcis Mill is a species of Prunus belonging to the subfamily Prunoideae of the family Rosaceae within Prunus it is classified in the subgenus Amygdalus distinguished from the other subgenera by the corrugated seed shell An almond is also the seed of this tree Botanically the almond is not a nut but a fruit The wild form of domesticated almond grows in parts of the Levant almonds must first have been taken into cultivation in this region The fruit of the wild forms contains the glycoside amygdalin quot which becomes transformed into deadly prussic acid hydrogen cyanide after crushing chewing or any other injury to the seed quot Before cultivation and domestication occurred wild almonds were harvested as food and doubtless were processed by leaching or roasting to remove their toxicity There are two forms of the plant one often with white flowers producing sweet almonds and the other often with pink flowers producing bitter almonds The kernel of the former contains a fixed oil and emulsion As late as the early 20th century the oil was used internally in medicine with the stipulation that it must not be adulterated with that of the bitter almond it remains fairly popular in alternative medicine particularly as a carrier oil in aromatherapy but has fallen out of prescription among doctors The bitter almond is rather broader and shorter than the sweet almond and contains about 50 of the fixed oil which also occurs in sweet almonds It also contains the enzyme emulsin which in the presence of water acts on a soluble glucoside amygdalin yielding glucose cyanide and the essential oil of bitter almonds which is nearly pure benzaldehyde Bitter almonds may yield from 6 to 8 of hydrogen cyanide Extract of bitter almond was once used medicinally but even in small doses effects are severe and in larger doses can be deadly the cyanide must be removed before consum

Almond Cheesecake

Made this the other day Almond Cheesecake with Nut Crust Nut Crust 1 9 inch springform pan 1 1 2 cups finely chopped nuts 2 Tablespoons granulated sugar 2 Tablespoons butter softened 1 Preheat oven to 400ºF 2 Place all ingredients in mixing bowl and blend thoroughly 3 Press firmly the mixture into the bottom and partially up the sides of a greased springform pan 4 Bake for about 6 minutes or until the crust is a light golden brown Cool before filling Almond Cheesecake Filling 1 pound cream cheese softened to room temp 3 4 cup granulated sugar 3 large eggs 1 teaspoon vanilla extract 1 2 teaspoon almond extract 1 3 cup chopped almonds 3 cups sour cream 1 Heat oven to 375ºF 2 Beat together cream cheese and sugar until fluffy 3 Add eggs 1 at a time beating thoroughly after each egg 4 Add extracts almonds and sour cream Mix until well blended 5 Pour mixture into prepared crust and bake for 1 hour or until set Turn off oven open the oven door slightly and cool to room temp Chill Top with whatever you like or plain Cherries go great with almonds and so does chocolate I whipped heavy cream added vanilla and almond extract powdered sugar until the whipped cream was thick Stiff peaks Enjoy
